Clotted cream is a thick yellow cream made by heating unpasteurized cow's milk and then leaving it in shallow pans for several hours. During this time, the cream content rises to the surface and forms 'clots'.

First created in either Cornwall or Devon, it can be used as a substitute for butter on vegetables; it can be used in mashed potatoes, pastries, on ice cream or as the only fat content for making a cake.

Clotted cream is the thickest of all the creams and so is better for spreading rather than pouring as with single or double cream.

Unlike whipped or aerosol cream, clotted cream keeps its shape. It will stand up on pies and cakes for several hours before serving without separating or becoming liquid.

You eat it on scones, with jam. It has a crust on like butter and a zillion calories in eat.

The big question with clotted cream and jam on scones, is whether you put the jam on first or the cream. This is a highly contentious issue and if you are in the UK you should watch what other people do as it varies from one part of the country to another and doing it wrong is likely to cause a riot.

NB the jam MUST be strawberry.
This is English clotted cream.

Usually, it is used with jam on scones.

You could use toast or a muffin if you don't have scones.

It is sooo good!

Hope this helps!

Enjoy!
you can use it as a butter substitute and spread it on scones
Devon cream is used on scones or biscuits instead of butter
